Gamay Ice Sphere:
1 Part Water:2 Parts Tawse Gamay Noir
1oz Tawse Gin
1oz Simple Syrup
1oz Fresh Lemon Juice
Fresh Basil Leaves
S. Pellegrino Cherry/Pomegranate
Sparkling Water
Gently bruise 2 fresh basil leaves and tuck into rocks glass beside ice sphere.
Combine ingredients over ice sphere.
Add blackberries for garnish
