Enjoy now until 2016!
2012 marks the second release of our Tawse Spark blend, crafted in the traditional method from a blend of Chardonnay (59%), Pinot Noir (28%) and Pinot Gris (13%) grapes from select Niagara Peninsula vineyards. Aged 12 month on its lees, this complex sparkling has an enticing nose of baked apple, brioche and a hint of white flower. Apple notes replay on the palate complemented by notes of citrus zest, lively acidity and a fine mousse making this wine perfect for any occasion!
Reviews and Accolades
Tawse Spark Brut 2012 ($25, winery, LCBO direct delivery, 89 points) – A quirky blend of Chardonnay, Pinot Noir and a splash of Pinot Gris made in the traditional method and spending 12 months on the lees. It’s fresh and flinty on the nose with lemon, citrus, melon and a subtle hint of tangerine and toast. It has an energetic mousse with vibrant acidity to go with grapefruit, lemon and toasty-vanilla nuances. Very clean and crisp through the finish. Rick VanSickle - Dec 2014
While perfectly enjoyable on its own, this versatile “Spark” is delicious with just about anything, from everyday comfort food to gourmet fare. With its refreshing acidity and layered flavours, it pairs particularly well with halibut tacos topped with guacamole, salt and pepper calamari or spicy Southern fried chicken. It’s also a perfect brunch option- try it with eggs Benedict with smoked salmon and chives or apple and cheese stuffed French toast!
